The Gin Distillery Journey

For nearly 20 years, I, Lex was immersed in the culinary arts, trained by my parents at their family restaurant in the heart of South West France. 

Growing up in the kitchen, I developed an unmatched understanding of how flavours complement each other, a skill passed down from my mother and honed over two decades.

In 2018, Linda, my then Girlfriend and I moved to Frankfurt, Germany because of Linda’s work commitments.

At the time, I was contemplating a career change, but fate had a different plan. One day, Linda handed me a mysterious package with a simple instruction: “Do not open until Christmas Day.”

Naturally curious, I asked for a hint about the contents. Linda replied, “You’ve told me there are two things you want in life, and this is one of them.” I immediately thought one of those things was a still, but I couldn’t quite recall the second item… So, I guessed, “Excellent! It’s a still!”

Despite my enthusiasm, Linda teased me, accusing me of peeking in the box early. I assured her I hadn’t, but on Christmas Day, the mystery was finally revealed. Inside the package was a 3-litre Alembic pot still—a perfect gift for someone with a passion for flavour and craftsmanship.

Using my extensive knowledge of pairing ingredients, developed over years of culinary training, I began experimenting with distillation. My kitchen quickly became a testing ground for gin recipes, and to my delight, I discovered a natural talent for creating exceptional, flavourful gins.

As our passion for distilling grew, Linda and I decided to build a distillery back in France, in the same rustic wood barn where I had learned to cook. With the support of my parents and now wife, Linda, we acquired two 100-litre stills, and Copper Coq Distillery was born.

The name “Copper Coq” comes from two inspirations: Alembic stills are traditionally made of copper, and the rooster (“coq” in French) is one of the national symbols of France. It’s a tribute to both the art of distillation and a homage to France.

Today, Copper Coq Distillery produces six distinctive gins, with more to come, as well as a Celtic schnapps, vodka, and rum. All of our products are made in France with 100% natural ingredients which are meticulously chosen from all over the world.
